The Menu and the People to Cook It

My assignment at Regatta All Day focused on developing the menu and recruiting the kitchen team.

The food needed to suit an all-day venue by the sea, with customers arriving at different times and for different reasons. The menu also had to work as a whole: ingredients, preparation and service demands needed to fit the kitchen and the people running it.

Recruitment formed part of the same job. Developing a menu involves understanding who will prepare it and building a team capable of delivering it.
