Two Different Places to Eat, Both With Their Own Character

During my time as Executive Chef at Adams Beach, Glasshouse and Vala gave me the opportunity to work on two very different dining experiences within the same hotel.

Vala Beach Club was a project I conceived and developed. It was very much my baby. Building the restaurant meant thinking about the whole food offer and how it would sit within a seaside setting, then turning that idea into a menu the kitchen could deliver.

Glasshouse called for a different approach. During my second year, while the restaurant was closed, I developed the ambitious menu intended for its reopening. That menu went into operation after my departure, with Chef Panayiotis Vasiliou leading its implementation.

I am proud of that contribution, and of the people who carried the work forward. Developing a restaurant or a menu is one part of the job; the team then has to bring it to life, service after service.
