Culinary Leadership for Hotels and Restaurants
How we work together ↗Running a hospitality business means making decisions about food, people and money every day. A menu change affects purchasing. Purchasing affects stock and cash. The way your team prepares and serves the food affects costs, consistency and whether customers return.
As your Fractional Executive Chef, I work regularly with you and your team across these areas. You gain experienced culinary and operational leadership, with a level of involvement and monthly fee agreed around your business.
Every business has
its own story.
Every business has its own circumstances. Some need help getting started. Others need their food operation reorganised, their team developed or a successful offer taken a little further.

My hospitality story began in Pafos, at my family’s Apollo Hotel. In 1985, aged thirteen, I started there as a trainee cook. Some of my earliest lessons came before the working day began: my father would take me to the markets at four in the morning. Those hours taught me to look closely, ask questions and respect the people and produce behind every meal.
